West African Groundnut Stew

Hmm, does that title entice you?  Maybe not?  But wait till you try this recipe!  We had it for supper last week and I took some pictures.  I remember the first time I ate it at one of our staff lunches.  One of the Interns made it all for us and we were all a little skeptical at first....but trust me, give it a go, it's excellent!


Here's the pot of stew....you begin by browning up 1 lb. ground beef and adding ¼ tsp. nutmeg, ½ Tbsp. chilli powder and 1 tsp. salt.  

Add and simmer 10 minutes:
1 Onion, chopped
1 Clove Garlic, minced
½ can Tomato Paste
1 c. Water (you can add more if it is too thick)
Red Pepper, if desired

then add ¼ cup Peanut Butter and simmer over low heat 10 minutes.

Serve over rice. I used Brown Basmati and it was really good.  It's more work to cook Brown Basmati, but it tastes good and it's so much higher in fibre and healthy-ness :)

Now here's the cool part:


This is what you can add on top of your stew believe it or not....

May be accompanied with small dishes of condiments:

Tomatoes
Red/orange peppers
Bananas
Pineapple tidbits
Peanuts
Sunflower seeds
Raisins
Curry powder


At first it really threw me adding the fruit to the stew, but he said to try and and we'd see how good it was.  And it really makes the stew!  


Here's what it looks like plated up.  Super good, and different too.  And my kids enjoyed it as well.  I think it's the fruit and peanut butter in there :)

Here's the straight recipe if you want to copy it.

Brown:
1 lb. ground beef

Very Interesting. I think that's whats for supper tonight. My son will love it. Good thing DH is working as I don't think he will.

Wow, that looks really interesting!! My husband is NOT into mixing fruit with meat....but I am! My favorite pizza is Hawaiian (ham and pineapple). :)

Delicious, and easy. I added garam masala, coconut and mango to the add ins. Great recipe and wonderful that it is made from pantry staples,

Made this tonight and YUM! My son and I loved it. We added a little more salt and some more hot spice as we like things a little spicier. It's going to be made again and again. THanks so much for sharing.
